Ingredients

  • Salsa - 1/2 cup
  • Sour cream - 1/2 cup
  • Avocado - 1, sliced
  • Tomato - 1, diced
  • Lettuce - 1 cup, shredded
  • Shredded cheese - 1 cup
  • Flour tortillas - 4 large
  • Cooked rice - 1 cup
  • Black beans - 1 can, drained and rinsed
  • Salt - 1/2 teaspoon
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Ground beef - 1 pound

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion, minced garlic, cumin, chili powder, and salt to the skillet. Cook for an additional 5 minutes, until the onion is softened.
  3. Stir in the black beans and cooked rice. Cook for another 2-3 minutes to heat through.
  4. Warm the flour tortillas in a separate skillet or in the microwave.
  5. Place a scoop of the beef and bean mixture onto each tortilla. Top with shredded cheese, lettuce, diced tomato, sliced avocado, sour cream, and salsa.
  6. Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
  7. Serve the Santa Barbara Burritos warm and enjoy!
