Rosemary Garlic Ribeye Roast

A succulent ribeye roast flavored with rosemary and garlic. Perfect for a special occasion or a weekend dinner.

Ingredients

  • Black pepper - 1 tablespoon
  • Salt - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 2 tablespoons, chopped
  • Garlic cloves - 6, minced
  • Ribeye roast - 1 (5 pound)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, olive oil, salt, and black pepper.
  3. Rub the garlic-rosemary mixture all over the ribeye roast, making sure to get into the crevices and on the sides.
  4. Place the roast on a rack in a roasting pan, fat-side up.
  5. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove the roast from the oven and let it rest for 15 minutes before slicing. This allows the juices to redistribute throughout the roast.
  7. Slice the roast and serve.
