Roasted Tomato and Basil Bruschetta

This delicious bruschetta is made with roasted tomatoes, fresh basil, and crusty bread.

Ingredients

  • Baguette - 1, sliced
  • Salt and pepper - To taste
  • Fresh basil leaves - 1/2 cup, chopped
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Roma tomatoes - 6, halved

Instructions

  1. Preheat the oven to 400°F.
  2. Place the halved tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast the tomatoes in the oven for 20 minutes, or until they are soft and slightly caramelized.
  4. In a small bowl, mix together minced garlic, balsamic vinegar, and chopped basil.
  5. Remove the roasted tomatoes from the oven and let them cool slightly.
  6. Meanwhile, toast the baguette slices in a toaster or under the broiler until they are golden brown.
  7. Once the tomatoes have cooled, gently remove the skins and chop them into smaller pieces.
  8. In a large bowl, combine the roasted tomatoes with the garlic-balsamic-basil mixture. Season with additional salt and pepper if needed.
  9. Top each toasted baguette slice with a spoonful of the tomato mixture.
  10. Serve the bruschetta immediately and enjoy!
