Onion and Tomato Bruschetta

This delicious bruschetta is made with caramelized onions, fresh tomatoes, and crusty bread.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Tomatoes - 2, diced
  • Red onion - 1, thinly sliced
  • Baguette - 1

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the baguette into 1/2-inch thick slices.
  3. Place the baguette slices on a baking sheet and brush both sides with olive oil.
  4. Bake for 10-12 minutes, or until the bread is toasted and crispy.
  5. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  6. Add the sliced onions and cook until caramelized, about 10 minutes.
  7. Add the minced garlic and cook for an additional 2 minutes.
  8. In a bowl, combine the diced tomatoes, caramelized onions, balsamic vinegar, chopped basil, salt, and pepper.
  9. Mix well to combine all the flavors.
  10. Top each toasted baguette slice with a spoonful of the tomato and onion mixture.
  11. Serve immediately and enjoy!
