Roasted Thyme Chicken

Ingredients

  • Lemon - 1, sliced
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Garlic - 4 cloves, minced
  • Fresh thyme - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Chicken - 1 whole, about 4 pounds

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, chopped thyme, minced garlic, salt, and black pepper.
  4. Rub the thyme mixture all over the chicken, including under the skin.
  5. Place the lemon slices inside the chicken cavity.
  6. Place the chicken on a roasting pan or a baking sheet with a wire rack.
  7. Roast the chicken in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  9. Serve the roasted thyme chicken with your favorite side dishes.
