Crispy Roasted Chicken

A simple yet delicious recipe for crispy roasted chicken. The skin is perfectly crisp and the meat is moist and flavorful.

Ingredients

  • Lemon - 1, halved
  • Garlic - 3 cloves, smashed
  • Fresh thyme - 5 sprigs
  • Olive oil - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Salt - 1 tablespoon
  • Whole chicken - 1 (4 to 5 pounds)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels.
  3. Season the inside of the chicken with salt and pepper.
  4. Stuff the chicken cavity with thyme, garlic, and lemon.
  5. Rub the outside of the chicken with the olive oil, then season with salt and pepper.
  6. Place the chicken in a roasting pan, breast side up.
  7. Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  8. Remove the chicken from the oven and let rest for 15 minutes before carving.
