This delicious roasted salmon dish is served with a medley of roasted vegetables.
Ingredients
Fresh lemon - 1, sliced
Salt and pepper - To taste
Dried thyme - 1 teaspoon
Garlic powder - 1 teaspoon
Olive oil - 2 tablespoons
Red onion - 1, sliced
Yellow bell pepper - 1, sliced
Zucchini - 1, sliced
Cherry tomatoes - 1 cup
Asparagus - 1 bunch
Salmon fillets - 4 pieces
Instructions
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
In a bowl, toss the asparagus, cherry tomatoes, zucchini, yellow bell pepper, and red onion with olive oil, garlic powder, dried thyme, salt, and pepper.
Spread the vegetable mixture around the salmon fillets on the baking sheet.
Arrange fresh lemon slices on top of the salmon.
Roast in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
