Roasted Salmon with Vegetables

This delicious roasted salmon dish is served with a medley of roasted vegetables.

Ingredients

  • Fresh lemon - 1, sliced
  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Red onion - 1, sliced
  • Yellow bell pepper - 1, sliced
  • Zucchini - 1, sliced
  • Cherry tomatoes - 1 cup
  • Asparagus - 1 bunch
  • Salmon fillets - 4 pieces

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. In a bowl, toss the asparagus, cherry tomatoes, zucchini, yellow bell pepper, and red onion with olive oil, garlic powder, dried thyme, salt, and pepper.
  4. Spread the vegetable mixture around the salmon fillets on the baking sheet.
  5. Arrange fresh lemon slices on top of the salmon.
  6. Roast in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  7. Serve the roasted salmon with the vegetables and enjoy!
