Ingredients

  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Balsamic vinegar - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Red onion - 1, sliced
  • Zucchini - 1, sliced
  • Red bell pepper - 1, seeded and sliced
  • Carrots - 2, peeled and sliced
  • Swiss chard - 1 bunch, stems removed and leaves chopped

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, toss the Swiss chard, carrots, red bell pepper, zucchini, and red onion with olive oil, balsamic vinegar, garlic powder, dried thyme, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
