This recipe features a colorful assortment of grilled vegetables, perfect as a side dish or a vegetarian main course.

Ingredients

  • Salt and pepper - To taste
  • Garlic powder - 1 teaspoon
  • Balsamic vinegar - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Asparagus - 1 bunch
  • Red onion - 1, sliced
  • Yellow bell pepper - 1, sliced
  • Red bell pepper - 1, sliced
  • Yellow squash - 2 medium, sliced
  • Zucchini - 2 medium, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the sliced zucchini, yellow squash, red bell pepper, yellow bell pepper, red onion, and asparagus with olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  3. Place the vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and slightly charred.
