Pesto and Mozzarella Omelette

This delicious omelette is filled with homemade pesto and melted mozzarella cheese.

Ingredients

  • Olive oil - 1 tablespoon
  • Black pepper - To taste
  • Salt - To taste
  • Mozzarella cheese - 1/2 cup, shredded
  • Pesto - 2 tablespoons
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook for 2-3 minutes, or until the edges start to set.
  4. Spread the pesto evenly over one half of the omelette.
  5. Sprinkle the shredded mozzarella cheese over the pesto.
  6. Fold the other half of the omelette over the filling.
  7. Cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
  8. Slide the omelette onto a plate and serve hot.
