Ricotta and Spinach Stuffed Chicken

This is a delicious and healthy dish where chicken breasts are stuffed with a mixture of ricotta cheese and spinach, then baked to perfection.

Ingredients

  • Parmesan cheese - 1/4 cup, grated
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Garlic - 2 cloves, minced
  • Spinach - 1 cup, cooked and drained
  • Ricotta cheese - 1 cup
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, mix together the ricotta cheese, spinach, garlic, salt, and pepper.
  3. Cut a pocket into each chicken breast and stuff with the ricotta mixture.
  4. Heat the olive oil in a large oven-safe skillet over medium heat.
  5. Add the stuffed chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
  6. Sprinkle the chicken with the Parmesan cheese and transfer the skillet to the oven.
  7. Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
