Rib Roast

This herb-crusted rib roast is a show-stopping centerpiece for any special occasion. The prime rib is seasoned with a flavorful herb crust and roasted to perfection.

Ingredients

  • Black pepper - 1 teaspoon
  • Salt - 1 tablespoon
  • Fresh thyme - 2 tablespoons, chopped
  • Fresh rosemary - 2 tablespoons, chopped
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Rib roast - 1 (4-5 pounds)

Instructions

  1. Preheat the oven to 450°F.
  2. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  3. Rub the olive oil all over the rib roast.
  4. Coat the rib roast with the herb mixture, pressing it onto the surface to adhere.
  5. Place the rib roast on a rack in a roasting pan, fat side up.
  6. Roast the rib roast in the preheated oven for 15 minutes.
  7. Reduce the oven temperature to 325°F and continue roasting for about 1 hour and 45 minutes, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 145°F for medium).
  8. Remove the rib roast from the oven and let it rest for 15-20 minutes before carving.
  9. Slice the rib roast and serve.
