Rhubarb and Quinoa Salad

This refreshing salad combines the tartness of rhubarb with the nuttiness of quinoa for a delicious and healthy dish.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Feta cheese - 1/2 cup, crumbled
  • Almonds - 1/2 cup, sliced
  • Strawberries - 1 cup, sliced
  • Spinach - 2 cups
  • Rhubarb - 2 stalks, thinly sliced
  • Water - 2 cups
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, bring the water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.
  2. In a large bowl, combine the cooked quinoa, sliced rhubarb, spinach, sliced strawberries, sliced almonds, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled and enjoy!
