Rhubarb and Pineapple Salsa

This refreshing salsa combines the tartness of rhubarb with the sweetness of pineapple for a delicious twist on traditional salsa.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Jalapeno - 1, seeded and finely chopped
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Pineapple - 1 cup, diced
  • Rhubarb - 2 cups, diced

Instructions

  1. In a medium bowl, combine the diced rhubarb, pineapple, red onion, cilantro, jalapeno, lime juice, honey, salt, and black pepper.
  2. Stir well to combine all the ingredients.
  3. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
  4. Serve chilled as a topping for grilled chicken, fish, or as a dip with tortilla chips.
