Rhubarb and Cilantro Salsa

This refreshing salsa combines the tartness of rhubarb with the freshness of cilantro for a unique and delicious twist.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Jalapeno - 1, seeded and finely chopped
  • Lime juice - 2 tablespoons
  • Cilantro - 1/2 cup, chopped
  • Red onion - 1/2 cup, finely chopped
  • Rhubarb - 2 cups, diced

Instructions

  1. In a medium bowl, combine the diced rhubarb, red onion, cilantro, lime juice, jalapeno, honey, salt, and black pepper.
  2. Mix well to combine all the ingredients.
  3. Taste and adjust the seasoning if needed.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
