Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Carrot - 1 medium, grated
  • Red cabbage - 1 cup, shredded
  • Jicama - 1 medium, julienned
  • Rhubarb - 2 stalks, thinly sliced

Instructions

  1. In a large bowl, combine the sliced rhubarb, jicama, red cabbage, grated carrot, and chopped cilantro.
