Rhubarb and Grape Salad

This refreshing salad combines the tartness of rhubarb with the sweetness of grapes for a perfect balance of flavors.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/2 cup, crumbled
  • Mixed salad greens - 4 cups
  • Red grapes - 2 cups, halved
  • Rhubarb - 2 stalks, thinly sliced

Instructions

  1. In a large bowl, combine the rhubarb, grapes, and mixed salad greens.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss to coat.
  4. Sprinkle the crumbled goat cheese and chopped walnuts over the top of the salad.
