Rhubarb and Beet Salad

This refreshing salad combines the tartness of rhubarb with the earthy sweetness of beets for a delightful combination of flavors.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Red onion - 1/4 cup, thinly sliced
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/2 cup, crumbled
  • Mixed greens - 4 cups
  • Beets - 2 medium-sized, roasted and diced
  • Rhubarb - 2 stalks, thinly sliced

Instructions

  1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine the mixed greens, sliced rhubarb, roasted beets, crumbled goat cheese, chopped walnuts, and sliced red onion.
