Gluten Free Beet and Goat Cheese Salad

This refreshing salad combines roasted beets, creamy goat cheese, and a tangy vinaigrette for a delicious gluten-free option.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Red onion - 1/4 cup, thinly sliced
  • Walnuts - 1/2 cup, chopped
  • Goat cheese - 1/2 cup, crumbled
  • Mixed greens - 4 cups
  • Beets - 4 medium-sized, roasted and sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap the beets in aluminum foil and roast for 45 minutes, or until tender. Let them cool, then peel and slice.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  4. In a large salad bowl, combine the mixed greens, roasted beets, crumbled goat cheese, chopped walnuts, and sliced red onion.
