Rhubarb and Banana Bread

This delicious rhubarb and banana bread is a perfect combination of sweet and tangy flavors.

Ingredients

  • Chopped walnuts - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 1/2 cup
  • Granulated sugar - 1 cup
  • Eggs - 2
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups
  • Bananas - 2 ripe, mashed
  • Rhubarb - 1 cup, diced

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs and sugar together until well combined.
  4. Add the mashed bananas, diced rhubarb, vegetable oil, and vanilla extract to the egg mixture. Stir well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
