Mango and Zucchini Bread

This delicious mango and zucchini bread is moist, flavorful, and perfect for breakfast or a snack.

Ingredients

  • Chopped walnuts - 1/2 cup
  • Zucchini - 1 cup, grated
  • Mango - 1 cup, diced
  • Vanilla extract - 1 teaspoon
  • Granulated sugar - 1 cup
  • Vegetable oil - 1/2 cup
  • Eggs - 2
  • Nutmeg - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, vegetable oil, sugar, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the diced mango, grated zucchini, and chopped walnuts.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve the mango and zucchini bread.
