Red Bean and Coconut Milk Drink

Ingredients

  • Salt - 1/4 teaspoon
  • Sugar - 1/2 cup
  • Coconut milk - 2 cups
  • Water - 4 cups
  • Red beans - 1 cup, soaked overnight

Instructions

  1. Rinse the soaked red beans and place them in a pot with the water.
  2. Bring the water to a boil, then reduce the heat and simmer until the beans are soft, about 15 minutes.
  3. Add the coconut milk, sugar, and salt to the pot and stir until the sugar is dissolved.
  4. Continue to simmer the mixture for another 5 minutes, until it is heated through.
  5. Serve the drink warm, or chill it in the refrigerator and serve it cold.
