Coconut Rice Pudding

This creamy and delicious coconut rice pudding is a comforting dessert made with coconut milk, rice, and a hint of vanilla.

Ingredients

  • Shredded coconut - 1/4 cup
  • Raisins - 1/4 cup
  • Salt - 1/4 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • White rice - 1 cup
  • Water - 1 cup
  • Coconut milk - 2 cups

Instructions

  1. In a medium saucepan, combine the coconut milk, water, rice, sugar, vanilla extract, cinnamon, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30-35 minutes, or until the rice is tender and the mixture has thickened.
  3. Stir in the raisins and shredded coconut, and cook for an additional 5 minutes.
  4. Remove from heat and let the pudding cool for a few minutes.
  5. Serve warm or chilled, garnished with additional shredded coconut if desired.
