Quinoa and Veggie Stuffed Bell Peppers

These delicious stuffed bell peppers are filled with a flavorful mixture of quinoa, vegetables, and spices.

Ingredients

  • Shredded cheese - 1/2 cup
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Spinach - 1 cup, chopped
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Quinoa - 1 cup, cooked
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened.
  4. Add zucchini, carrot, tomato, and spinach to the skillet. Cook until vegetables are tender.
  5. Stir in cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.
  6. Stuff the bell peppers with the quinoa and vegetable mixture.
  7. Place the stuffed bell peppers in a baking dish. Sprinkle shredded cheese on top.
  8. Bake for 25-30 minutes, or until the bell peppers are tender and the cheese is melted and golden.
  9. Serve hot and enjoy!
