This delicious veggie burger is made with a flavorful blend of vegetables, beans, and spices.
Ingredients
Ketchup - 4 tablespoons
Mayonnaise - 4 tablespoons
Pickles - 4 slices
Tomato - 1, sliced
Lettuce - 4 leaves
Hamburger buns - 4
Salt and pepper - To taste
Paprika - 1/2 teaspoon
Cumin - 1 teaspoon
Egg - 1
Breadcrumbs - 1/2 cup
Garlic - 2 cloves, minced
Onion - 1/2, diced
Red bell pepper - 1/2, diced
Zucchini - 1/2, grated
Carrot - 1, grated
Quinoa - 1/2 cup, cooked
Black beans - 1 can, drained and rinsed
Instructions
In a large bowl, mash the black beans with a fork or potato masher.
Add the cooked quinoa, grated carrot, grated zucchini, diced red bell pepper, diced onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well to combine.
Form the mixture into patties, about 1/2 inch thick.
Heat a grill or skillet over medium heat and lightly oil the surface.
Cook the veggie burgers for about 5-6 minutes per side, or until golden brown and heated through.
Toast the hamburger buns on the grill or in a toaster.
Spread mayonnaise on the bottom half of each bun, then top with a veggie burger patty.
Add lettuce, tomato slices, and pickles.
Spread ketchup on the top half of each bun and place it on top of the burger.
