Quinoa Stuffed Bell Peppers

These colorful bell peppers are stuffed with a flavorful mixture of quinoa, vegetables, and spices.

Ingredients

  • Cheese (optional) - 1/2 cup, shredded
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Spinach - 1 cup, chopped
  • Tomato - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Quinoa - 1 cup, cooked
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.
  4. Add zucchini, tomato, and spinach to the skillet. Cook until vegetables are tender.
  5. Stir in cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.
  6. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  7. If desired, sprinkle shredded cheese on top of the stuffed peppers.
  8. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
  9. Remove the foil and bake for an additional 5 minutes to melt the cheese (if added).
  10. Serve the quinoa stuffed bell peppers hot and enjoy!
