Quinoa and Vegetable Salad

This refreshing quinoa and vegetable salad is packed with nutritious ingredients and bursting with flavors.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Bell pepper - 1, diced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Water - 2 cups
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.
  3. In a large bowl, combine the cooked quinoa, cucumber, tomatoes, bell pepper, red onion, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa and vegetable mixture.
  5. Toss everything together until well combined and evenly coated with the dressing.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve chilled and enjoy!
