Fava Bean and Quinoa Salad

This refreshing salad combines fava beans, quinoa, and a variety of fresh vegetables for a nutritious and delicious meal.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, diced
  • Fava beans - 1 cup, shelled
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water and cook according to package instructions. Once cooked, let it cool.
  2. In a pot of boiling water, blanch the fava beans for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skin of the beans.
  3. In a large mixing bowl, combine the cooked quinoa, fava beans, cucumber, cherry tomatoes, red onion, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled and enjoy!
