Pyongyang Doenjang

Pyongyang Doenjang is a traditional Korean fermented soybean paste stew that is rich in flavor and packed with nutritious ingredients.

Ingredients

  • Salt - To taste
  • Red pepper flakes - 1 teaspoon
  • Green onions - 2, chopped
  • Sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Onion - 1, sliced
  • Potato - 1, diced
  • Zucchini - 1, sliced
  • Tofu - 1 block, cubed
  • Water - 4 cups
  • Doenjang (korean fermented soybean paste) - 1/2 cup

Instructions

  1. In a large pot, combine the water and doenjang. Stir well to dissolve the doenjang.
  2. Add the tofu, zucchini, potato, onion, garlic, sesame oil, soy sauce, sugar, green onions, red pepper flakes, and salt. Mix well.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
  4. Taste and adjust the seasoning if needed.
  5. Serve hot with steamed rice.
