Prawn Quesadillas

These delicious prawn quesadillas are filled with juicy prawns, melted cheese, and flavorful spices.

Ingredients

  • Salsa - For serving
  • Sour cream - For serving
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1, thinly sliced
  • Green bell pepper - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Cheddar cheese - 1 cup, shredded
  • Flour tortillas - 8
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced onion, bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the prawns, cumin, paprika, salt, and pepper to the skillet. Cook until the prawns are pink and cooked through, about 3-4 minutes.
  4. Remove the prawn mixture from the skillet and set aside.
  5. Place a tortilla in the skillet and sprinkle with shredded cheddar cheese.
  6. Add a portion of the prawn mixture on top of the cheese.
  7. Top with another tortilla and press down gently.
  8. Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
  9. Repeat with the remaining tortillas and prawn mixture.
  10. Cut the quesadillas into wedges and serve hot with sour cream and salsa.
