Quesadillas

These cheesy chicken quesadillas are filled with tender chicken, melted cheese, and flavorful spices.

Ingredients

  • Salsa - For serving
  • Sour cream - For serving
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Jalapeno - 1, seeded and diced
  • Onion - 1, thinly sliced
  • Green bell pepper - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Cheddar cheese - 2 cups, shredded
  • Flour tortillas - 8
  • Chicken breast - 2, cooked and shredded

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the sliced onion, bell peppers, and jalapeno. Cook until the vegetables are softened, about 5 minutes.
  3. Add the shredded chicken, cumin, paprika, salt, and pepper. Stir to combine and cook for another 2 minutes.
  4. Remove the chicken mixture from the skillet and set aside.
  5. Place a tortilla in the skillet and sprinkle with a handful of shredded cheese.
  6. Spread a portion of the chicken mixture over half of the tortilla.
  7. Fold the tortilla in half to create a half-moon shape.
  8. Cook the quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy.
  9. Repeat with the remaining tortillas and filling.
  10. Serve the quesadillas hot with sour cream and salsa on the side.
