Prawn and Pineapple Curry

This delicious prawn and pineapple curry is a perfect blend of sweet and savory flavors.

Ingredients

  • Cooked rice - For serving
  • Fresh cilantro - For garnish
  • Vegetable oil - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, sliced
  • Bell peppers - 1, sliced
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Red curry paste - 2 tablespoons
  • Coconut milk - 1 can
  • Pineapple chunks - 1 cup
  • Prawns - 500 grams

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the onion, garlic, and ginger. Cook until the onion is translucent, about 5 minutes.
  3. Add the red curry paste and cook for another minute, stirring constantly.
  4. Add the prawns and cook until they turn pink and are cooked through, about 3-4 minutes.
  5. Add the bell peppers and pineapple chunks. Cook for another 2 minutes.
  6. Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Stir well to combine.
  7. Simmer the curry for 10 minutes, allowing the flavors to meld together.
  8. Serve the prawn and pineapple curry over cooked rice.
  9. Garnish with fresh cilantro and enjoy!
