Bok Choy and Chicken Curry

This flavorful curry combines tender chicken and nutritious bok choy in a rich and aromatic sauce.

Ingredients

  • Fresh cilantro - For garnish
  • Cooked rice - For serving
  • Salt - To taste
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Red bell pepper - 1, sliced
  • Onion - 1, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Curry paste - 2 tablespoons
  • Coconut milk - 1 can (400ml)
  • Bok choy - 4 heads, chopped
  • Chicken breast - 2, boneless and skinless, cut into bite-sized pieces

Instructions

  1. In a large pan or wok, heat some oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Stir in the curry paste and cook for another minute.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the chopped bok choy and sliced red bell pepper. Cook until the vegetables are tender.
  7. Season with fish sauce, lime juice, brown sugar, and salt to taste. Adjust the seasoning according to your preference.
  8. Serve the curry over cooked rice and garnish with fresh cilantro.
