Curry Beef Stir Fry

This flavorful curry beef stir fry is made with tender beef, colorful vegetables, and aromatic spices.

Ingredients

  • Cooked rice - 4 cups
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Coconut milk - 1/2 cup
  • Broccoli florets - 2 cups
  • Carrots - 2, julienned
  • Onion - 1, sliced
  • Bell peppers - 2, sliced
  • Vegetable oil - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Soy sauce - 2 tablespoons
  • Curry powder - 2 tablespoons
  • Beef sirloin - 1 pound, thinly sliced

Instructions

  1. In a bowl, combine the sliced beef, curry powder, soy sauce, minced garlic, and grated ginger. Mix well and let it marinate for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over high heat.
  3. Add the marinated beef and stir fry for 2-3 minutes, until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers, onion, julienned carrots, and broccoli florets. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
  5. Return the cooked beef to the skillet and add the coconut milk, fish sauce, and lime juice. Stir well to combine.
  6. Cook for an additional 2-3 minutes, until the sauce has thickened slightly and the flavors have melded together.
  7. Remove from heat and sprinkle with fresh chopped cilantro.
  8. Serve the curry beef stir fry over cooked rice.
