Prawn and Grits

This delicious dish combines succulent prawns with creamy grits for a flavorful and satisfying meal.

Ingredients

  • Green onions - 2, chopped (for garnish)
  • Salt and pepper - To taste
  • Cajun seasoning - 1 tablespoon
  • Bell pepper - 1, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Butter - 2 tablespoons
  • Chicken broth - 2 cups
  • Grits - 1 cup
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil.
  2. Slowly whisk in the grits and reduce the heat to low. Cook for 20 minutes, stirring occasionally, until the grits are creamy and tender.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the garlic, onion, and bell pepper. Cook until the vegetables are softened, about 5 minutes.
  5. Season the prawns with Cajun seasoning, salt, and pepper. Add them to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes per side.
  6. Serve the prawns over the creamy grits.
  7. Garnish with chopped green onions.
