Prawn and Cheddar Grits

This delicious dish combines succulent prawns with creamy cheddar grits for a flavorful and comforting meal.

Ingredients

  • Lemon wedges - For serving
  • Salt and pepper - To taste
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Butter - 2 tablespoons
  • Chicken broth - 2 cups
  • Grits - 1 cup
  • Cheddar cheese - 1 cup, grated
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil.
  2. Slowly whisk in the grits and reduce the heat to low. Cook for 20 minutes, stirring occasionally, until the grits are thick and creamy.
  3. In a large skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute until fragrant.
  4. Add the prawns to the skillet and cook for 3-4 minutes, until they turn pink and opaque. Season with salt and pepper.
  5. Stir in the grated cheddar cheese and chopped green onions into the cooked grits until melted and well combined.
  6. Divide the cheesy grits among serving plates and top with the cooked prawns.
  7. Serve hot with lemon wedges on the side.
