Prawn and Chorizo Tostadas

These delicious tostadas are topped with succulent prawns, spicy chorizo, and a flavorful salsa.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Tomato - 1, diced
  • Avocado - 1, diced
  • Corn tortillas - 8
  • Chorizo - 4 ounces, sliced
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the prawns and chorizo to the skillet and cook until the prawns are pink and cooked through, and the chorizo is crispy, about 5 minutes.
  3. Remove the prawns and chorizo from the skillet and set aside.
  4. In the same skillet, lightly toast the corn tortillas on both sides until crispy.
  5. In a bowl, combine the diced avocado, tomato, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  6. To assemble the tostadas, place a spoonful of the salsa on each toasted tortilla.
  7. Top with the cooked prawns and chorizo.
  8. Garnish with additional cilantro and lime wedges, if desired.
  9. Serve immediately and enjoy!
