Crab and Grits

This delicious dish combines succulent crab meat with creamy grits for a flavorful and satisfying meal.

Ingredients

  • Lemon wedges - For serving
  • Salt and pepper - To taste
  • Old bay seasoning - 1 teaspoon
  • Green onions - 4, chopped
  • Garlic - 2 cloves, minced
  • Butter - 2 tablespoons
  • Heavy cream - 1/2 cup
  • Chicken broth - 2 cups
  • Grits - 1 cup, stone-ground
  • Crab meat - 1 pound, lump or claw meat

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil.
  2. Slowly whisk in the grits and reduce the heat to low.
  3. Cover and simmer for 20 minutes, or until the grits are tender and creamy.
  4. In a separate skillet, melt the butter over medium heat.
  5. Add the minced garlic and chopped green onions, and sauté for 2-3 minutes.
  6. Add the crab meat and Old Bay seasoning to the skillet, and cook for another 5 minutes, stirring occasionally.
  7. Pour in the heavy cream and stir until well combined.
  8. Season with salt and pepper to taste.
  9. To serve, spoon the creamy grits onto plates or bowls.
  10. Top with the crab mixture and garnish with additional chopped green onions.
  11. Serve hot with lemon wedges on the side.
