Prahok Ktis

Prahok Ktis is a traditional Cambodian dish made with fermented fish paste, pork, and coconut milk.

Ingredients

  • Fresh cilantro - For garnish
  • Vegetable oil - 2 tablespoons
  • Salt - To taste
  • Sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Kaffir lime leaves - 4 leaves
  • Lemongrass - 1 stalk, bruised
  • Shallots - 2, thinly sliced
  • Garlic - 4 cloves, minced
  • Coconut milk - 1 can (14 oz)
  • Pork - 1 pound, thinly sliced
  • Prahok - 1/2 cup

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the minced garlic and sliced shallots. Cook until fragrant and golden brown.
  3. Add the sliced pork and cook until browned on all sides.
  4. Add the prahok and stir well to combine with the pork.
  5. Pour in the coconut milk and stir to incorporate.
  6. Add the bruised lemongrass, kaffir lime leaves, fish sauce, sugar, and salt. Stir well.
  7. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  8. Remove the lemongrass stalk and kaffir lime leaves.
  9. Serve hot, garnished with fresh cilantro.
