Prahok

Prahok is a traditional Cambodian dish made with fermented fish paste.

Ingredients

  • Steamed rice - For serving
  • Fresh vegetables (such as cucumber, lettuce, and herbs) - For serving
  • Vegetable oil - 2 tablespoons
  • Water - 1/4 cup
  • Sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Galangal - 1 thumb-sized piece, thinly sliced
  • Kaffir lime leaves - 4 leaves, thinly sliced
  • Lemongrass - 1 stalk, minced
  • Shallots - 2, thinly sliced
  • Garlic - 4 cloves, minced
  • Pork belly - 200 grams, thinly sliced
  • Prahok - 200 grams

Instructions

  1. In a mortar and pestle, pound the prahok until smooth.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Add the minced garlic, sliced shallots, minced lemongrass, sliced kaffir lime leaves, and sliced galangal. Cook until fragrant.
  4. Add the sliced pork belly and cook until browned.
  5. Add the pounded prahok, fish sauce, sugar, and water. Stir well to combine.
  6. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  7. Serve the prahok with steamed rice and fresh vegetables.
