Potato and Vegetable Hash

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, diced
  • Bell peppers - 1 large, diced
  • Potatoes - 4 medium, diced

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook for 8-10 minutes, or until they start to brown and become crispy.
  3. Add the diced bell peppers, onion, and zucchini to the skillet. Cook for another 5 minutes, or until the vegetables are tender.
  4. Sprinkle the garlic powder, paprika, salt, and pepper over the vegetables. Stir well to combine.
  5. Cook for an additional 2-3 minutes, or until the flavors are well incorporated.
  6. Remove from heat and sprinkle with fresh parsley.
