Potage aux Legumes D'hiver

This hearty winter vegetable soup is made with potatoes, carrots, celery, and onions.

Ingredients

  • Salt and pepper - To taste
  • Bay leaf - 1
  • Thyme - 1 teaspoon
  • Vegetable broth - 4 cups
  • Potatoes - 2, peeled and cubed
  • Celery - 2 stalks, chopped
  • Carrots - 2, chopped
  • Onions - 2, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, carrots, celery, and potatoes and cook until the vegetables are softened, about 10 minutes.
  3. Add the vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Remove the bay leaf and serve the soup hot.
