Ingredients

  • Honey - 1 tablespoon
  • Dijon mustard - 1 tablespoon
  • Chicken broth - 1/2 cup
  • Dried thyme - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Milk - 1/4 cup
  • Butter - 2 tablespoons
  • Sweet potatoes - 2 large, peeled and cubed
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Pork tenderloin - 1 pound

Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and black pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the pork tenderloin on all sides until browned, about 2 minutes per side.
  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F.
  6. While the pork is cooking, place the sweet potatoes in a pot of boiling water and cook until tender, about 10-15 minutes.
  7. Drain the sweet potatoes and return them to the pot.
  8. Add butter, milk, garlic powder, and dried thyme to the pot with the sweet potatoes.
  9. Mash the sweet potatoes until smooth and creamy.
  10. In a small saucepan, combine chicken broth, Dijon mustard, and honey.
  11. Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally.
  12. Slice the cooked pork tenderloin and serve with the sweet potato mash and sauce.
