Ingredients

  • Red pepper flakes - 1/4 teaspoon
  • Honey - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Red onion - 1/2, finely chopped
  • Mango - 1, peeled and diced
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Pork tenderloin - 1 pound

Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt, black pepper, paprika, and garlic powder.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F.
  6. While the pork is cooking, prepare the mango chutney by combining diced mango, red onion, cilantro, lime juice, honey, and red pepper flakes in a bowl.
  7. Mix well to combine all the ingredients.
  8. Remove the pork tenderloin from the oven and let it rest for 5 minutes.
  9. Slice the pork into medallions and serve with the mango chutney on top.
