This delicious pork tenderloin is served with a tangy and sweet mango chutney.
Ingredients
Red pepper flakes - 1/4 teaspoon
Honey - 1 tablespoon
Lime juice - 1 tablespoon
Fresh cilantro - 2 tablespoons, chopped
Red onion - 1/2, finely chopped
Mango - 1, peeled and diced
Garlic powder - 1/2 teaspoon
Paprika - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Salt - 1 teaspoon
Olive oil - 2 tablespoons
Pork tenderloin - 1 pound
Instructions
Preheat the oven to 400°F.
Season the pork tenderloin with salt, black pepper, paprika, and garlic powder.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F.
While the pork is cooking, prepare the mango chutney by combining diced mango, red onion, cilantro, lime juice, honey, and red pepper flakes in a bowl.
Mix well to combine all the ingredients.
Remove the pork tenderloin from the oven and let it rest for 5 minutes.
Slice the pork into medallions and serve with the mango chutney on top.
