Ingredients

  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Corn kernels - 1 cup, cooked
  • Red onion - 1/2 cup, finely chopped
  • Red bell pepper - 1, diced
  • Pinto beans - 2 cans, drained and rinsed

Instructions

  1. In a large bowl, combine the pinto beans, diced red bell pepper, chopped red onion, cooked corn kernels, halved cherry tomatoes, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
