Pinto Bean and Chicken Fajita Bowls

These delicious and healthy fajita bowls are packed with flavorful pinto beans, grilled chicken, and a variety of colorful vegetables.

Ingredients

  • Salsa - 1/4 cup
  • Sour cream - 1/4 cup
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Cooked rice - 2 cups
  • Pinto beans - 1 can, drained and rinsed
  • Onion - 1, sliced
  • Bell peppers - 2, sliced
  • Olive oil - 2 tablespoons
  • Fajita seasoning - 2 tablespoons
  • Chicken breasts - 2, boneless and skinless

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breasts with fajita seasoning and drizzle with olive oil.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice into strips.
  4. In a separate pan, heat 1 tablespoon of olive oil over medium heat.
  5. Add the sliced bell peppers and onion to the pan and cook until they are tender and slightly charred, about 5-7 minutes.
  6. Add the pinto beans to the pan and cook for an additional 2-3 minutes, until heated through.
  7. Divide the cooked rice among 4 bowls.
  8. Top each bowl with the grilled chicken, sautéed peppers and onions, and pinto beans.
  9. Drizzle with lime juice and sprinkle with chopped cilantro.
  10. Serve with sour cream and salsa on the side.
