Pinto Bean and Beef Fajitas

These delicious pinto bean and beef fajitas are packed with flavor and perfect for a satisfying meal.

Ingredients

  • Lime - 1, cut into wedges
  • Cilantro - 1/4 cup, chopped
  • Salsa - 1/2 cup
  • Guacamole - 1/2 cup
  • Sour cream - 1/2 cup
  • Tortillas - 8, warmed
  • Olive oil - 2 tablespoons
  • Fajita seasoning - 2 tablespoons
  • Pinto beans - 1 can, drained and rinsed
  • Onion - 1, thinly sliced
  • Bell peppers - 2, thinly sliced
  • Flank steak - 1 pound, thinly sliced

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the sliced flank steak and cook until browned, about 3-4 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5 minutes.
  4. Add the drained and rinsed pinto beans to the skillet. Stir in the fajita seasoning and cook for an additional 2 minutes.
  5. Return the cooked flank steak to the skillet and toss everything together to combine.
  6. Warm the tortillas in a separate skillet or in the oven.
  7. Serve the pinto bean and beef mixture on the warmed tortillas.
  8. Top with sour cream, guacamole, salsa, chopped cilantro, and a squeeze of lime juice.
  9. Fold the tortillas and enjoy!
