Ingredients

  • Hot water - 1 cup
  • Brown sugar - 1/4 cup
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Flour - 1/2 cup
  • Butter - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Milk - 2 cups
  • White rice - 1 cup
  • Apricots - 2 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F.
  2. In a saucepan, combine the rice, milk, sugar, vanilla extract, and cinnamon. Cook over medium heat, stirring occasionally, until the rice is tender and the mixture has thickened, about 20 minutes.
  3. In a separate saucepan, melt the butter. Stir in the flour, baking powder, salt, and brown sugar until well combined.
  4. Spread the cooked rice mixture evenly in a greased baking dish. Top with the sliced apricots.
  5. Pour the hot water over the apricots.
  6. Drop spoonfuls of the butter-flour mixture over the apricots.
  7. Bake for 25-30 minutes, or until the top is golden brown and the apricots are bubbly.
