Pineapple Lemon Bars

These pineapple lemon bars are a refreshing and tangy dessert with a tropical twist.

Ingredients

  • Powdered sugar - For dusting
  • All - purpose flour - 1/4 cup
  • Pineapple juice - 1/4 cup
  • Lemon juice - 1/4 cup
  • Eggs - 2
  • Sugar - 1/2 cup
  • Cream cheese - 8 oz, softened
  • Butter - 1/2 cup, melted
  • Graham cracker crumbs - 1 1/2 cups

Instructions

  1. Preheat the oven to 350°F and line a 9x9-inch baking dish with parchment paper.
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared baking dish to form the crust.
  3. In a separate bowl, beat the cream cheese and sugar until smooth. Add the eggs, lemon juice, pineapple juice, and flour. Mix until well combined.
  4. Pour the cream cheese mixture over the crust in the baking dish.
  5. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool completely. Refrigerate for at least 2 hours to set.
  7. Once chilled, dust with powdered sugar and cut into bars.
  8. Serve and enjoy!
