Pineapple Coconut Bars

These pineapple coconut bars are a tropical delight with a buttery crust, sweet pineapple filling, and a coconut topping.

Ingredients

  • Powdered sugar - For dusting
  • Vanilla extract - 1 teaspoon
  • Eggs - 2
  • All - purpose flour - 1/4 cup
  • Sugar - 1/2 cup
  • Crushed pineapple - 1 can (20 oz), drained
  • Sweetened shredded coconut - 1 cup
  • Graham cracker crumbs - 1 1/2 cups
  • Butter - 1/2 cup, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a medium bowl, combine the melted butter, graham cracker crumbs, and 1/2 cup of shredded coconut. Press the mixture into the bottom of the prepared baking dish to form the crust.
  3. In another bowl, mix together the crushed pineapple, sugar, flour, eggs, and vanilla extract until well combined. Pour the pineapple mixture over the crust.
  4. Sprinkle the remaining 1/2 cup of shredded coconut evenly over the pineapple layer.
  5. Bake for 35-40 minutes, or until the edges are golden brown and the center is set.
  6. Allow the bars to cool completely in the baking dish, then refrigerate for at least 1 hour to firm up.
  7. Once chilled, cut into squares and dust with powdered sugar before serving.
